Sirloin Stockade Case Study

The Stockade Companies partnered with Fresh to reimagine the future of their Sirloin Stockade buffet restaurant brand. The project was driven by three key objectives: create a smaller-format restaurant that could respond to rising construction costs and limited real estate opportunities, attract and retain younger consumers—particularly the millennial demographic—and design an experience that engaged all five senses: sight, smell, taste, touch, and sound.

One of the earliest challenges was reducing the typical restaurant footprint from approximately 1,330 square meters to just 650 square meters without compromising seating capacity, guest services, or back-of-house operations. At the same time, the design needed to improve traffic flow, reduce bottlenecks, and minimize conflicts between guest and staff circulation. Equally important was creating an environment that felt fresh and relevant while remaining true to the values and heritage of the Sirloin Stockade brand.

Drawing inspiration from contemporary dining trends—including public markets, food halls, and food festivals—the resulting concept celebrates discovery, variety, and community. The design emphasizes fresh, approachable food experiences while reinforcing Sirloin Stockade’s long-standing commitment to treating guests like family.

From the moment guests arrive, they are welcomed into an environment designed to create anticipation and excitement. Carefully selected materials, colours, and visual cues establish a sense of comfort, familiarity, and authenticity while reflecting the brand’s values of quality, integrity, and hospitality.

The arrival experience was designed to support multiple customer needs. Guests can choose to dine in, pick up an order, or browse a retail offering. Flexible payment options, including both self-service and traditional service models, empower customers while creating a seamless and convenient experience. Along the way, carefully introduced brand elements begin telling the story of what awaits inside.

Within the dining room, a variety of seating options accommodates individuals, couples, families, business groups, and friends alike. The space is intentionally inclusive, allowing guests to choose the dining experience that best suits their needs. Greenery throughout the restaurant reinforces a sense of freshness, while colourful tile accents and natural materials create warmth, authenticity, and a connection to local character.

Guests are surrounded by enticing views of the food offerings, clearly organized and identified through bold, illuminated signage. This approach not only improves navigation but also enhances the sense of abundance and choice that defines the buffet experience.

Throughout the restaurant, a consistent palette of materials and design elements ties the experience together. The concept balances customer independence with moments of elevated service and engagement. Features such as the carving station add a sense of theater to the dining experience, while practical elements—including plate storage and service touchpoints—are seamlessly integrated into the overall design and reinforced through thoughtful brand cues.

As part of the concept development process, Fresh also explored alternative franchise formats and operational enhancements, including options for incorporating a full-service bar and other market-specific adaptations.

The Sirloin Stockade prototype demonstrates what is possible when research, strategy, customer experience, operations, and brand identity are considered together. While creating an attractive restaurant environment is important, the most successful hospitality spaces emerge when design solutions support both the emotional and practical needs of guests and operators alike.
